In this multi-day virtual/in-person workshop we will cover all of the basics of Puff Pastry — What makes it so great?! What ingredients are vital? How to use it to make a variety of delicious treats?!
On Day 1 of our Workshop: Saturday.January.6, 2024, we will meet ONLINE from 10am-Noonish. The week prior, you will be emailed a copy of our recipe booklet and the virtual meeting link. We will meet on January 6 to get ourselves acquainted, cover some of the theory on our topic of choice (Laminated Doughs), and get busy preparing two different types of Puff Pastry (Classic and Blitz). By the end of the 2.5 hours together online, you will have 2 different blocks of Puff Pastry finished and ready to hit the freezer for the week.
Day 2 of our Workshop: Saturday.January.13, 2024, we will meet in the Red Hen Artisanale studio, located in the picturesque hamlet of Glenelg Centre (just South of Markdale!), right along the Saugeen River. We will be together from 9am-noon, and you will come to the workshop equipped with both of your doughs that you prepared the week before, online, at home. As a group, we will analyze our doughs and answer any questions that arose over the week.
We will then use both of your doughs to create several different treats:
– Apple Tarte Tatin
– Palmiers
– Everything Bagel Puff Pastry Twists
On Day 2, while our Puff Pastry items are baking away in the oven, we will also work in teams to create Baklava, using phyllo dough. You will head home with newfound confidence in your pastry making abilities, a new repertoire of recipes to pull from, and inspiration to create outside of the box!
You will be going home with hands full of all of the treats created during the workshop, a new social network, and a fresh set of skills!

– For Day 1 of the Workshop, you will be emailed the recipe booklet and shopping list ahead of time. You’ll acquire the ingredients at home, and follow along to me on the computer to create the recipes of the day.
– On Day 2, you will come to the studio with your Puff Pastry that (You!) created. I will have all other tools, equipment, and ingredients needed for the day.
– The Workshop takes place Online on Saturday.January.6 (pt.1), and In-Person on Saturday.January.13 (pt.2)
